Mom's Lace Cookies

I can't say that I really have "Family recipes" or at least if I do, I don't know what they are or where they are. I recently had this conversation with my Mom as well, and we will see what we come up with. One thing I do remember in the kitchen growing up was when my Mom used to bake cookies. Now at the time, I didn't appreciate what she was doing, I just knew I wanted a cookie!!! :) I have always liked Florentine or Lace Cookies and get them from a bakery or the diner. Most of the time those places take two of these put chocolate in the middle and make a sandwich, or they drizzle a ton of chocolate on the top. It has been FOREVER since I had one my Mom made, so I just couldn't remember the taste of hers. I now understand why the diners and bakery use so much chocolate. Their lace cookies just have nothing, and I mean NOTHING, on my Mom's. Theirs have no flavor in the cookie so they need the chocolate, it is all they have. However, Mom's lace cookies, Oh My. You just can't touch how delicious they are. I wouldn't want to ruin them with chocolate!!!! Maybe I might drizzle a slight amount of chocolate over them one day but they don't need it!!!!
